1.Heat a large frying pan over medium heat. Add sausages; cook and turn for 6-8 minutes or until cooked. Transfer to a heatproof plate; cover to keep warm.
2.Add butter and oil to pan; stir until melted. Add potato; cook, covered, stirring occasionally, for 10 minutes or until browned and cooked. Reduce heat to low. Return sausages to pan with any resting juices, then cover and cook for a further 2 minutes or until heated.
3.Combine mango, onion, cucumber, mint and juice in a medium bowl. Season. Serve sausages and potato with mango salsa and rocket.
Lamb, chicken and gourmet sausages also work well in this recipe. You can replace canned mango with 1 large fresh mango, finely chopped.
