Method
1.Combine pork, paste and sauces in a bowl.
2.Heat half the oil in a wok over high heat; stir-fry pork, in batches, until browned. Remove from wok.
3.Heat remaining oil in wok; stir-fry mushrooms and carrots until tender. Return pork to wok; stir-fry until hot. Season to taste.
4.Serve stir-fry topped with chilli.
If you have time, the pork mixture at the end of step 1 can be marinated for a few hours or overnight in the fridge.
