1.Put shallots and 1 tablespoon butter in a small saucepan, cover with a lid and cook gently until softened. Cool.
2.Put pork mince in a bowl with the cooled shallots, scraping in all the butter from the pan. Add the salt, garlic and chorizo. Squeeze in the juice from the ginger (discard ginger). Mix thoroughly with clean hands then shape into 12 sausages. Transfer to a tray and chill for 1 hour.
3.Roll sausages in panko crumbs. Heat 2 tablespoons olive oil in a medium frying pan over medium heat. Add 1 tablespoon butter and add half the sausages. Fry gently until golden and cooked through. Transfer to a heated plate and repeat with remaining sausages, adding a little more oil and butter if necessary (the cooked sausages can be kept warm, uncovered, in an oven preheated to low).
4.Alternatively, cook sausages on a barbecue hotplate preheated to low and let them sizzle gently, keeping hotplate well oiled. Increase heat at the end to colour them.
5.Nestle sausages in split rolls, and if liked, drizzle with mayonnaise. Serve with mustard and tomato ketchup.
If mayonnaise is too thick to drizzle, thin it with a little warm water first. For a neater drizzle, spoon mayonnaise into a small piping bag fitted with a small plain nozzle, or into a paper cone, and pipe over sausages.
