Pork fried rice

An economical and tasty dinner that uses up leftover cooked rice or pork. This quick and easy pork fried rice is simply delicious with its sweet and sour-flavoured sauce.

Ingredients

Method

1.Heat oil in a wok or large frying pan on high. Pour in eggs. Cook for 1-2 minutes, scrambling with a wooden spoon, until cooked. Transfer to a bowl.
2.Add mince to same wok. Cook for 4-5 minutes, breaking up with the back of a wooden spoon, until browned.
3.Return egg to wok with rice, vegetables and sauces. Stir-fry for 4-5 minutes, until heated through. Sprinkle with green onion to serve.

You can use any veggies you have on hand, such as carrot, zucchini, frozen peas and canned corn. You will need 1 cup raw rice to make 3 cups cooked rice.
