1.Cook risoni in a medium saucepan of boiling salted water 6-8 minutes, or until tender; drain.
2.Meanwhile, using a meat mallet, pound each pork medallion to 1cm thick. Toss pork in flour. shaking off excess.
3.Heat butter in a large frying pan over moderate heat. Cook pork 2-3 minutes each side, or until just cooked. Transfer to an oiled baking tray.
4.Preheat an oven grill to moderately high.
5.Using hands, squeeze excess liquid from spinach; chop coarsely. Top pork with half the sauce, then spinach, remaining sauce, basil and cheese.
6.Cook under grill 4-5 minutes, or until cheese is golden. Serve pork with risoni and lemon wedges.
