Method
1.Heat vegetable oil in a large frying pan on medium. Season pork to taste. Cook for 10-15 minutes, turning until browned and cooked to taste. Rest, covered, for 5 minutes.
2.SPICY MANGO SALSA: In a large bowl, combine all ingredients. Season to taste, tossing gently.
3.Cut pork into 1cm slices. Serve with salsa and salad.
Mangoes are ripe when the flesh gives slightly under gentle pressure and they smell sweet and fruity. The pork in this recipe can be cooked on a chargrill or barbecue plate if preferred. The meat is rested after cooking to allow its fibres to relax and the juices to be retained in the meat.
