Method
1.Preheat oven to moderate, 180°C. Lightly grease a large baking dish.
2.Heat oil in a large frying pan on medium; saute capsicum and onion 4-5 minutes, until softened.
3.Add chilli and garlic; cook 1 minute. Add pork and half of enchilada sauce; bring to boil, stirring occasionally.
4.Spoon equal amount of filling down centre of tortillas. Roll up to enclose.
5.Place tortillas, seam side down, in dish. Pour remaining sauce; sprinkle with grated cheese. Bake 15-20 minutes, until cheese melts and is bubbling. Serve with salad.
