Method
1.Place potato in a large saucepan; cover with water and bring to the boil. Cook 15 minutes, until tender; drain.
2.Mash potato. Add butter and milk; mash well. Add rocket, parmesan and lemon rind; season to taste and stir until combined. Set aside; keep warm.
3.Meanwhile, heat oil in a large frying pan on medium-high. Cook pork cutlets 4-5 minutes each side, or until cooked as desired.
4.Serve cutlets with parmesan mash and tomato chutney.
