Method

1.Heat half oil and butter together in a frying pan on medium.
2.Saute onion, garlic and spice 3-4 minutes, until tender.
3.Add cherries, juice, sugar and vinegar, stirring until sugar dissolves. Bring to a simmer; cook 3-4 minutes, stirring, until cherries soften slightly. Season to taste.
4.Meanwhile, heat a large frying pan on high. Brush pork with remaining oil; season to taste. Cook 3-4 minutes each side, until cooked to taste. Rest, covered, 5 minutes.
5.Serve pork with cherry sauce and watercress.
