Method

1.Place pork in a medium bowl and coat with hoisin sauce. Cover and marinate for 15-30 minutes.
2.Cook soba noodles in a large pot of boiling, salted water for 3-4 minutes, until just tender. Drain and refresh under cold running water. Set aside.
3.Heat oil in a medium frying pan on high. Cook pork 3-4 minutes each side. Reduce heat to low and cook pork for further 6-7 minutes each side, until golden or cooked to your liking. Transfer pork to a plate, cover and rest for 15 minutes.
4.Meanwhile, in a large bowl, combine lettuce, cucumber, radish, mint and onions. Slice pork and toss through salad with combined dipping sauce and sesame oil.

Replace red capsicum with radish, if liked. Chicken or leftover barbecued pork also work well in this salad.
