Pork and macadamia salad with sage and honey vinaigrette

With succulent pork, apple and sweet honey vinaigrette this dish shows that salads don't have to be the boring rabbit-food option.

Ingredients

Method

1.Heat oil in a large frying pan on medium. Season pork to taste.
2.Cook pork for 10-15 minutes, turning, until browned and cooked to taste. Rest, covered, for 5 minutes. Slice thinly.
3.Meanwhile, in a large bowl, combine lettuce, tomatoes, apple and nuts.
4.SAGE and HONEY VINAIGRETTE: In a jug, whisk together all ingredients. Season to taste. Drizzle dressing over salad, tossing gently.

This salad would also be delicious with chicken or lamb. Pork can also be baked in the oven at 200°C for 15-20 minutes.
