Method

1.Drain and flake 210g can pink or red salmon. Mix with 100g low-fat cream cheese, 2 chopped green onions, 1 tablespoon chopped parsley, 2 teaspoons sweet chilli sauce and juice of 1/2 a lemon.
2.Spoon into a container and chill. Place 2 slices lean cold meat (pastrami, ham, beef), 30g piece cheese, pickles or chutney, salad leaves, pickled onions and gherkins in a lunch box.
3.Pack a damper roll or crusty bread and a small container of salmon dip and keep chilled until required.

Add a simple pate and crackers if desired. Use fresh ricotta in place of cream cheese.
