Method

1.In a bowl, combine chicken, oil and piri piri seasoning; toss well to coat. Set aside.
2.Coarsely grate potatoes into a large bowl; stir in salt. Using hands, squeeze out excess liquid. Divide into 8 equal portions.
3.Heat a large frying pan on medium. Spray with oil.
4.Add 4 portions of potato to pan, flattening with a spatula. Cook 3-4 minutes each side, until golden brown and tender. Cover to keep warm. Repeat with remaining portions.
5.Meanwhile, preheat a char-grill or barbecue plate to high. Char-grill chicken 2-3 minutes each side, until browned and cooked through.
6.Serve chicken with rosti, rocket and cherry tomatoes.
