Picnic sandwich loaf with cardamom and mango chutney

Method

1.Preheat the oven to 190°C.
2.Wash the spinach and, with the moisture still clinging to the leaves, place in a saucepan. Heat and stir gently until just wilted.
3.In a large bowl, combine the bread, egg, milk and salt and mix with a fork until the bread is very soft.
4.Heat the oil in a small saucepan and gently cook the onion and garlic until soft. Then add all the spices and cook gently for 1-2 minutes until fragrant, taking care not to burn the spices. Remove from the heat.
5.Mix the spiced onion and mince into the bread mixture – use hands to ensure it is well mixed.
6.Spread mixture onto a sheet of foil and form into a square, roughly 30cm x 30cm.
7.Arrange spinach over the meat in a single layer then spread with mango chutney. Use the foil to roll the meat into a log like a Swiss roll then transfer to a greased roasting pan and discard the foil.
8.Cook in the oven for 50 minutes. Cool and serve in slices with crusty bread and salad.
