Method

1.Heat oil in a large frying pan over moderate heat. Add bacon; cook, stirring, 4-5 minutes, or until crisp. Add onion and garlic; cook, stirring, 1 minute, or until softened.
2.Stir in tomato. Bring to the boil. Reduce heat; simmer, uncovered, 5 minutes, or until thickened slightly.
3.Meanwhile, cook pasta in a large saucepan of boiling salted water 10-12 minutes, or until pasta is tender. Drain, reserving 1/4 cup of cooking liquid.
4.Add pasta, reserved cooking liquid and spinach to frying pan; cook 2-3 minutes, or until heated. Remove from heat. Season. Stir in feta. Serve sprinkled with parsley.

You can use ricotta instead of feta. Use any short pasta you like. For chilli lovers, cook a chopped red chilli with the onion.
