Method

1.Cut green ends of spring onion into 4cm lengths. Peel and quarter onion bulbs.
2.Melt butter in a large saucepan on medium heat. Add onion, peas, lettuce and 1/3 cup water. Cook, covered, for 5 minutes. Stir through mint leaves, season to taste and serve immediately.

When you’re quartering a spring onion, leave the root attached so it doesn’t fall apart while cooking. A microwave can he a great help for cooking this side dish when you’re busy preparing the rest of the meal.
