Pear and smoked chicken salad with parmesan crisps

Forget boring salads! The sweetness of the pear marries magically with the smoked chicken, crispy prosciutto and blue cheese. Parmesan crisps and toasted pecans add the finishing crunchy touch.

Method

1.Preheat oven to 180°C (160°C fan-forced). Cut each tortilla into six wedges.
2.Arrange on an oven tray lined with baking paper. Sprinkle with parmesan. Bake for 4-5 minutes or until golden. Cool. Meanwhile, crisp prosciutto in oven for 3-5 minutes.
3.Combine prosciutto, salad leaves, chicken, blue cheese, pear and pecans in a bowl.
4.Whisk oil and vinegar in a small bowl. Season. Drizzle over salad. Serve topped with parmesan crisps.
