Method
1.Combine potato, 3 cups of water, stock and half the pesto in large saucepan; bring to the boil. Reduce heat; simmer, covered, about 15 minutes or until potato is tender.
2.Add peas to pan; simmer, uncovered, about 5 minutes or until peas are tender. Cool 10 minutes.
3.Meanwhile, combine remaining pesto and 1 tablespoon water in small jug.
4.Blend or process soup, in batches, until smooth. Return soup to pan to heat through.
5.Serve soup topped with pesto mixture.
