Method

1.In a medium saucepan, bring water and stock cubes to the boil on high. Keep warm.
2.In a second saucepan, melt butter on medium heat. Saute onion and garlic for 2-3 minutes, until tender. Add rice, stirring for 1-2 minutes, until the grains are coated with butter.
3.Add one ladleful of hot stock to the rice, stirring until all the liquid is absorbed. Continue adding stock one ladleful at a time, stirring, and ensuring all the liquid is absorbed before adding more. The whole process should take 20 minutes. With the last addition of stock, add peas, dill and zest. Cover and remove from heat.
4.Meanwhile, heat oil in a large frying pan on medium. Cook fish, skin-side down first,for 2-3 minutes on each side. Serve with risotto and garnish with dill.

If you have any leftover risotto allow it to cool,form it into balls, coat them in egg and breadcrumbs and shallow-fry for delicious fingerfood.
