Method

Parmesan fish with tomato relish

1.Dust fish pieces in flour, shaking off excess. Dip into egg and coat in combined crumbs and parmesan. Chill for 15 minutes.
2.Heat oil in a deep pan until a small piece of bread sizzles when added.
3.Deep-fry fish in batches, for 1-2 minutes, until golden. Remove with a slotted spoon. Drain on paper towel. Top with extra parmesan and serve with tomato relish. Accompany with other seafood such as prawns or oysters, if liked.

4.Heat oil in a saucepan. Saute onion and garlic for 1-2 minutes, until onion is tender. Stir in remaining ingredients. Season to taste.
5.Bring to boil, stirring. Reduce heat and simmer for 25-30 minutes, until thickened. Cool.

Seasoned flour is plain flour with added seasoning of choice, such as salt, pepper or herbs.
