1.Preheat oven to 160°C. Line a large oven dish with baking paper.
2.In a large bowl, combine sauces and chilli paste. Reserve 1/3 cup of the mixture, then add ribs to bowl, tossing to coat.
3.Arrange ribs in a single layer in dish. Cover with foil. Bake 45 minutes.
4.Rub corn with butter and season to taste. Wrap each piece of corn in foil to enclose. Place in an ovenproof dish and bake for last 10 minutes of rib cooking time.
5.Remove foil from ribs. Increase oven to 200°C. Baste ribs with reserved marinade. Bake, uncovered, with corn, 10-15 minutes, until golden and glossy. Accompany with green salad.
You can use canned chipotle chillies, sold in specialty food stores, instead of chilli paste. They will give the ribs a smoky flavour.
Note
