Oregano chicken kebabs with herb couscous

Spiced, grilled chicken on delicately herbed couscous makes a lovely lunch or light dinner.

Method

1.Combine oregano, rind, juice and garlic in small bowl. Combine a sprinkling of the oregano mixture with a few of pieces of the chicken in a small bowl for the toddler; cover, refrigerate 1 hour.
2.Combine remaining oregano mixture, remaining chicken, spices and chilli in medium bowl; cover, refrigerate 1 hour.
3.Thread chicken for toddler onto one bamboo skewer. Thread remaining chicken onto eight bamboo skewers. Cook skewers on heated oiled grill plate (or grill or barbecue) until cooked.
4.Meanwhile, make herb couscous. Bring stock to the boil in small saucepan; remove from heat, add couscous and juice. Cover couscous; stand 5 minutes, fluffing with fork occasionally. Stir in parsley.
5.Remove chicken for toddler from skewer. Serve chicken with a little of the herb couscous.
6.Season remaining chicken and herb couscous to taste: serve with yogurt.

Soak the bamboo skewers in water for at least one hour before using to prevent scorching. The chicken can be marinaded overnight, then skewered and cooked close to serving. Couscous is best made just before serving.
