Method

1.Spread pepitas over a microwave-safe plate lined with paper towels. Cover with another paper towel. Microwave on high for 40 seconds or until lightly toasted. Cool.
2.Combine stock and juice in a 1-litre (4-cup) microwave-safe dish. Microwave on high for 2 minutes. Add chicken to stock; microwave on high for 4 minutes. Turn chicken: microwave on high for 2 minutes or until cooked. Transfer chicken to a heatproof plate. Cool. Discard stock. Shred or slice chicken.
3.Place rice in a microwave-safe bowl with 1 1/4 cups warm water. Microwave, covered, on high for 10-12 minutes or until rice is tender and liquid is almost absorbed. Stand for 2 minutes. Fluff rice with a fork to separate grains. Cool.
4.Add capsicum, celery, pepitas and chives to rice. Combine oil, extra juice, mustard, salt and pepper in a small jug. Arrange lettuce on serving plates. Top with rice salad and chicken. Serve drizzled with dressing.

Use water instead of stock. Pepitas are edible pumpkin seeds; they’re dark green and are in the health foods aisle.
