Method
1.Preheat oven to 180°C.
2.Arrange chicken, potatoes, lemon, garlic and thyme in a baking pan. Drizzle with oil and season to taste. Bake for 20 minutes.
3.Add capsicum, olives and tomatoes to pan. Bake for another 15 minutes, until chicken is cooked when tested. Serve with salad and crusty bread.
If preferred, use an orange instead of a lemon.
