Method

1.Heat oil in a frying pan on medium. Season trout skin and cook, skin-side down, for 4 minutes. Turn and cook for 3-4 minutes, until cooked to taste. Transfer to a plate. Keep warm.
2.Meanwhile, bring water to boil in a saucepan. Add miso, stirring until smooth. Add soba noodles. Boil 3-4 minutes, until tender. Remove from heat and stir spinach leaves through
3.To make wasabi mayonnaise, combine mayonnaise and wasabi paste in a small bowl. Set aside.
4.Ladle noodles and broth into serving bowls. Top with ocean trout. Accompany with wasabi mayonnaise and sea salt.

You can use any firm fish with the skin on.
