Method
1.Combine beef, egg and pistachios in medium bowl; shape mixture into four patties.
2.Cook patties in heated oiled medium frying pan until cooked through.
3.Meanwhile, using vegetable peeler, cut cucumber lengthways into thin strips. Divide cucumber, patties and aïoli between four split and toasted turkish bread rolls; season to taste.
Use a whole-egg mayonnaise instead of the aïoli, if you prefer.
