Method
1.Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper. Combine noodles, pepitas and sunflower seeds in a large bowl. Whisk egg white. honey, sesame oil and cinnamon in a jug; add to noodle mix. Toss gently to coat evenly.
2.Spread noodle mixture evenly over prepared tray. Bake for 5-6 minutes or until golden. Using a large metal spoon, stir mixture; sprinkle coconut and sesame seeds over mixture. Stir to combine. Bake for 5-7 minutes more or until toasted. Using a spoon, break up mixture roughly. Cool on tray.
3.Add apricot and banana chips to noodle mixture; stir to combine.
For an adult noodle mix, omit honey and cinnamon. Add a touch of curry powder and nuts such as raw unsalted almonds or cashews. Fried rice noodles are also available and are gluten free.
