Method

1.Preheat oven to hot, 200°C. Line a baking dish with foil or baking paper.
2.Arrange chicken pieces in a single layer in prepared dish.
3.In a bowl, combine butter, mustard, 1 tablespoon olive oil, honey and garlic. Brush liberally over chicken.
4.Bake chicken 25-30 minutes, turning once, until cooked through.
5.Meanwhile, in a bowl, toss together parsnips, remaining olive oil and maple syrup. Cook in a frying pan over low heat 10-15 minutes, until parsnips are golden and tender.
6.Serve chicken with parsnips and spinach salad.
