Mussels in white wine (Moules marinieres)

Ingredients

Method

1.Heat oil in a large frying pan on medium. Saute onion and garlic for 2-3 minutes, until onion is tender.
2.Stir in wine and juice. Bring to the boil. Reduce heat. Simmer for 2-3 minutes until liquid has reduced by half.
3.Blend in cream and season to taste. Bring to boil. Reduce heat and simmer for 3-5 minutes until sauce thickens slightly.
4.Add prepared mussels, stirring to coat with sauce. Simmer, covered, for 3-5 minutes, until mussels open (discard any unopened ones). Stir through parsley.
5.Serve mussels immediately with bread for dipping, if desired.

Clean mussels by scrubbing shells with a firm brush and removing fibrous “beard” by pulling with a knife.
