1.Dice the mussel meat and combine it in a bowl with the corn, parsley, eggs, flour, Cajun spice and reserved corn juice. Season with salt and pepper and add a little water if needed to make a soft batter.
2.Heat the oil in a shallow frying pan. Place tablespoons of the mixture in the oil and fry the fritters for 2-3 minutes on each side until they are golden and cooked through. Drain on paper towels.
3.Swirl the sweet chilli sauce into the sour cream and serve it with the fritters and fresh parsley and sliced spring onion.
Note
- Makes 10 large fritters. – Try adding a mixture of other seafood, such as prawns or shrimps and crab meat to this recipe. You can also replace the canned sweet corn with fresh sweet corn, cut from the cob
