2.In a large frying pan, heat oil over medium heat; cook fish, in batches, for about 3-5 minutes or until browned both sides and cooked as desired.
3.Meanwhile, to make fruity couscous: Place couscous, the water and butter in a large heatproof bowl. Cover; stand for about 5 minutes or until water is absorbed, fluffing with fork occasionally. Stir in remaining ingredients.
4.Divide couscous among serving plates; top with fish.
Serve with a bowl of combined yoghurt and coarsely chopped fresh coriander, if desired.
