Garlic-infused pizza topped with caramelised onions and mushrooms is topped with mozzarella cheese that melts wonderfully into the crust creating a sweet, mild earthly taste.
1.Preheat oven to hot, 200°C. Line an oven tray with foil.
2.To make caramelised onion, heat butter and oil together in a large frying pan on medium. Saute onion 8-10 minutes, until very tender. Stir in sugar and vinegar. Turn heat to low; cook, stirring occasionally, 8-10 minutes, until caramelised. Season to taste.
3.Place bread halves, cut side up, on a large oven tray. Spread evenly with caramelised onion; sprinkle with prosciutto.
4.Heat oil in a large frying pan on high. Saute mushrooms and garlic 5-6 minutes, until tender. Spoon over base. Top with cheese.
5.Bake 5-10 minutes, until cheese melts and base is crisp. Serve topped with rocket.
