Minty lamb cutlets with mixed vegie smash
Method
1.Make mixed veggie smash by boiling, steaming or microwaving potato, carrot and peas, separately, until tender; drain. Crush potato and peas roughly in large bowl; stir in carrot and remaining ingredients.
2.Meanwhile, combine mint and jelly in small bowl.
3.While the vegetables are cooking, rub combined rind and oil over lamb; cook lamb on heated oiled grill plate (or grill or barbecue) until cooked as you like.
4.Serve lamb with vegie smash and mint mixture.
