Method
1.Prepare rice following packet instructions. Transfer to a serving dish, separating grains with a fork. Set aside to cool.
2.Meanwhile, pour boiling water over currants. Set aside 5 minutes to soften; drain well.
3.Add currants to rice with almonds, mint, onion and dressing; toss to combine.
4.Serve with char-grilled kebabs. Garnish with mint leaves.
