2.Place mint, oil, garlic and chilli in a food processor or blender. Process until smooth. Rub mixture over lamb. Season to taste. Place racks in a large greased baking dish.
3.In a large bowl, combine nectarines, plums, peaches, balsamic, brown sugar and garlic. Toss well. Place in baking dish with lamb.
4.Bake for 25-30 minutes until lamb is cooked to taste. Serve sprinkled with extra mint leaves. Accompany with steamed greens of choice.
Lamb racks cook quickly so 25-30 minutes will cook the meat to medium. If you prefer meat to be well done, continue cooking for a further 10-15 minutes.
