Method
1.Heat oil in a large saucepan on medium. Saute onion and garlic for 2-3 minutes, or until onion has softened. Add chicken pieces and cook on medium heat for 5 minutes, or until cooked through.
2.Stir through taco seasoning mix, then add chicken stock and beans. Bring to the boil. Reduce heat, simmer for 10 minutes.
3.Remove from heat and stir through coriander. Serve topped with light sour cream, if using, and corn chips.
This is excellent as a filling in a warm taco shells or enchiladas. The chilli is in the taco seasoning.
