Mediterranean toasted roll

Looking for a quick delicious lunch? Then try a golden and crisp Mediterranean toasted roll packed with marinated chargrilled capsicum, semi-dried tomatoes and Spanish salami.

Method

1.Halve rolls horizontally. Spread 1 tablespoon basil dip over the bottom halves.
2.Layer evenly with salami, capsicum, tomato, cheese and spinach.
3.To toast, preheat a sandwich press. Toast rolls until golden and crisp. Serve warm. Accompany with salad, if liked.

Use any dip of choice. Buy char-grilled vegies at supermarkets from the deli or off the shelf in jars.
