Method

1.Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender. Drain.
2.Squeeze sausage meat from casings; discard casings. Combine sausage meat and breadcrumbs. Shape heaped tablespoons of mixture into balls and place on a baking tray lined with baking paper.
3.Heat oil in a frying pan. Add meatballs and cook, turning, for 5 minutes or until browned and cooked. Add zest and tomato to pan. Season. Cook, stirring, for 2 minutes or until tomato starts to soften. Add rocket, crumbled stock cube, boiling water, capsicum, pasta and half the parmesan. Toss gently until rocket just starts to wilt. Spoon into serving bowls. Serve sprinkled with remaining parmesan and black pepper.

You’ll need 2 slices of day-old bread to make 1 cup breadcrumbs. You can use any type of sausage, such as lamb, chicken or beef.
