Ingredients

Method

1.Saute onion and garlic in oil 2-3 minutes. Add cumin and coriander. Cook for 1-2 minutes.
2.In a bowl, combine mince and onion mixture. Shape into 12 even-sized balls.
3.Heat oil in large frying pan on medium. Cook meatballs 8-10 minutes, turning. until cooked through. Drain on paper towel.
4.To make the couscous salad: Combine 1 cup couscous with 1 cup boiling water to soak, then fluff up with fork. Add chopped mint, parsley, tomato, red onion and garlic
5.Serve pita breads topped with hummus, leaves, couscous salad and meatballs
