Method

1.Squeeze mince from sausage casings. Shape into 16 meatballs. Heat oil in a large saucepan over high heat. Add meatballs; cook and stir for 5 minutes or until browned.
2.Add garlic, tomato and 2 cups water. Bring to the boil. Reduce heat. Add vegetables, beans and pasta; cook for 8-10 minutes or until pasta is tender.
3.Serve soup sprinkled with parmesan.

Replace sausages with bought meatballs; you’ll find them in the meat and mince section of major supermarkets. Depending on desired consistency, you may need to add a little more water to thin soup in Step 2.
