Lentils and rice with fried onions

This Middle Eastern delight is so easy even the kids can help. Cinnamon and cumin add spice while a zesty lemon and warm pita bread compliment the lentils and rice.

Ingredients

Method

1.Wash and check lentils for small stones. Place in a bowl and cover with water. Set aside to soak 1 hour. Drain and place in a medium saucepan, cover with enough water to come 5cm above lentils and bring to boil on high heat. Reduce heat to medium and simmer 30 minutes, until just tender.
2.In a large saucepan, heat half the oil on medium. Cook chopped onion, stirring, 3 minutes, until soft and beginning to colour. Stir in cumin and cinnamon and add rice. Cook 1 minute, until well coated, then add 3 cups water, lentils with cooking liquid and 1 teaspoon salt. Bring to boil. Reduce heat to low, cover and cook 20-25 minutes, until rice is tender and liquid is absorbed. Season with pepper.
3.Meanwhile, heat remaining oil in a frying pan on medium and cook sliced onions, stirring, 8 minutes, until soft and golden. Spoon rice and lentil mixture into bowls and top with fried sliced onions. Serve with lemon wedges and pita bread.
