Method

1.Discard any stones among lentils. Place lentils in a large saucepan with 7 cups water. Bring to boil on high heat. Add celery, carrot, onion, garlic, tomato and olive oil and simmer on low heat for 1 hour, until lentils are tender and soup thickens slightly.
2.Stir through chopped celery leaves and season to taste. Serve with parmesan and crusty bread.
