Method
1.Combine lemon juice, olive oil, soy and parsley in a shallow bowl. Add drumettes and coat well. Cover and marinate for 1 hour in the refrigerator.
2.Preheat oven to 200°C. Drain marinade from drumettes and arrange in a small roasting pan. Bake for 20 minutes, turning halfway through cooking, until chicken is golden and cooked through.
3.Serve with cucumber and celery sticks.
Drumettes come from the thick part of chicken wings, are available in the meat section of the supermarket.
