Method
1.Heat half the oil in a medium saucepan over moderate heat.
2.Add lamb; cook, stirring, 2-3 minutes, or until seared. Transfer to a heatproof bowl.
3.Add remaining oil to pan; cook shallot and garlic, stirring, 3-4 minutes, or until shallot softens.
4.Add tomato and stock. Return lamb to pan; bring to the boil. Reduce heat; simmer, covered, 10-12 minutes, or until lamb is tender.
5.Stir in beans; cook, uncovered, 5 minutes, or until sauce thickens slightly. Add spinach; cook, stirring, 2-3 minutes, or until wilted.
6.Spoon rice into serving bowls; top with lamb mixture, feta and oregano. Serve with tzatziki.
