Ingredients

Method

1.Combine lamb and all other ingredients in shallow dish. Season to taste. Marinate at least 30 minutes.
2.Thread lamb onto skewers and spray with oil.
3.Heat a barbecue plate or char-grill pan on high. Cook lamb 8-10 minutes turning on all sides, until cooked through.

Serve with a salad of 750g boiled and cooled kipfler potatoes tossed with 125g blanched green beans, 1 sliced avocado and a little mayonnaise. Sprinkle with crispy bacon, fresh mint and parsley.
