Ingredients

Method

1.Heat oil in a large, heavy-based saucepan on medium; cook onion and garlic 4-5 minutes, stirring often, until golden.
2.Increase heat to high; brown mince 4-5 minutes, breaking up lumps. Stir in honey and spices; cook 1 minute.
3.Add stock, rice and sultanas. Bring to boil. Reduce heat to low; cook, covered, 10-12 minutes, until liquid is almost absorbed.
4.Stir carrot through. Cover; set aside 5 minutes. Serve topped with tomato, yoghurt and coriander.
