Lamb manoush salad

Easy, tasty, fresh and fast. This middle-eastern inspired salad is satisfying with rounds of tender, juicy lamb, tangy tomatoes, bitter rocket leaves and spice infused hot, toasted bread.

Ingredients

Method

1.Preheat oven to 200°C. Preheat a barbecue or grill pan over medium-high heat.
2.Spray bread with olive oil and sprinkle with za’atar and sea salt. Place bread on a baking tray and place in the oven for 5 minutes until golden and slightly crisp. Remove from oven and allow to cool.
3.Meanwhile, spray lamb with olive oil and season with sea salt and pepper. Cook in grill pan or on barbecue for 2½ minutes per side for medium, or to your liking. Remove lamb from heat, cover with foil and let rest for 5 minutes.
4.Combine tomatoes, mint, parsley, rocket, olives, onion, extra virgin olive oil and vinegar in a large serving bowl and toss well to combine. Season with sea salt and pepper. Break bread into bite-sized pieces and scatter over salad.
5.Slice lamb into rounds, toss through salad and serve.

Za’atar is a spice mix commonly used in Middle Eastern cuisine and can be brought at most supermarkets.
