Ingredients

Method

1.In a shallow dish, combine lamb, zest, juice, coriander, oregano and garlic. Season to taste; marinate 30 minutes. Thread lamb onto skewers.
2.Heat a char-grill or barbecue plate on medium. Cook skewers 3-4 minutes each side, until cooked to taste.
3.Char-grill haloumi 30 seconds each side. Heat falafel following packet instructions.
4.Arrange lettuce and tomatoes on a platter; drizzle with oil. Arrange lamb, haloumi and falafel on another platter with tzatziki and lemon wedges.
5.Serve with pita bread for guests to make their own wraps.

Using a ready-made tzatziki saves time.
