1.In a small bowl, combine oyster sauce and sherry.
2.Heat half the oil in a wok or large frying pan on high. Stir-fry lamb in two batches for 1-2 minutes until browned. Transfer to a bowl.
3.Heat remaining oil in wok. Stir-fry chilli, garlic and ginger for 1 minute. Add broccolini, onion and stock. Stir-fry 2-3 minutes until broccolini is tender.
4.Return lamb to wok with sherry mixture and noodles, then stir-fry 1-2 minutes until heated through.
