Lamb burger

1.In a large bowl, combine mince, breadcrumbs, oregano, egg, onion and garlic. Season to taste. Shape lamb mixture into 4 even-sized, flattened patties. Chill 15-20 minutes.
2.Heat half of the oil in a large frying pan on medium. Cook patties 4-5 minutes each side, until golden and cooked through. Drain on paper towel; keep warm.
3.In a separate large frying pan, heat remaining oil on medium. Fry haloumi slices 2-3 minutes each side, until golden. Drain on paper towel.
4.Spread base of each roll with hummus. Top each with rocket, tomato, haloumi and patty. Cover with tops of rolls. Serve with extra hummus and lemon wedges.
